As the lockdown continues, we’re all looking at ways to keep ourselves and children entertained. Before this all began, I certainly did not bake. I never had the ‘time’ and didn’t know where to start. Three weeks on, and I think I may enter The Great British Bake Off and give Paul Hollywood a run for his money. (I think I may have become a little over confident here but I’m really enjoying it and it has been a really fun and engaging activity for my four year old too.
Kirsty, who works within our Events Team is always making delicious treats and she has kindly recommended one of her favourite and simple recipes – a crunchy chocolate chip biscuit bar. You don’t need any utensils and you can mix with your hands, so is perfect for little ones too.
Making time about 10 – 15 minutes. Baking time about 35 – 40 minutes.
Ingredients
100g spread/butter for baking
150g demerara sugar
1 egg
1 teaspoon vanilla essence
225g self raising flour
100g chocolate chips
Method
Heat the oven to 190C/ 170Fan/ Gas5. Grease a tin (11 x 7 x 1 inch deep) (27.5 x 17.5 x 2.5cm deep).
Place all ingredients together in a bowl and mix thoroughly.
If you find it easier, mix with your hands. Spread the mixture in the tine and then bake for 35 minutes until it is golden brown and has shrunk slightly from the sides of the tin.
Lift them out and put them on a wire rack to finish cooling.
Leave to cool slightly and then cut into 16 pieces.
